Happy summer solstice! We hope you have been enjoying the longer days and are finding time for family, friends, and fun. Speaking of spending time with family and friends, we want to give you a heads up that we will be closed for the 4th of July, so there will be NO Meal Delivery that week. With how the holiday falls this year (on Tuesday), we are giving our dedicated, hard working crew the week off to recharge their batteries and enjoy being with their loved ones. Fear not, we will be returning on Monday, July 10th! 

You may want to consider ordering some extra meals this week and freeze them so that you've got delicious, healthy meals at your fingertips while we're away. Let us know if we can help you with freezing advice and best practices!

Next week's menu is sure to have something for everyone. Our Jamaican Style Jerk Tofu is loaded with veggies and tons of flavor. The spice level is a 5 out of 10, so it will have a bit more heat than our usual meals, but not too much so you can enjoy trying Jerk flavors for the first time if you have always been a little shy of doing so. Another vegan dish that is tasty and super healthy is our Lentil Dal with Hearty Greens and Pomegranate Seeds. We use split red lentils and spice things up with ginger, turmeric, cumin, and tomato, then top it all off with a bundle of blanched collard greens. Your future self will thank you!

We are also super stoked to offer our Veggie Enchilada Bowl with Green Rice and your choice of Pulled Chicken or Black Beans. This dish is packed with veggies, including broccoli, red bell pepper, and Swiss chard. Our green rice (which is actually brown rice!) is as health-supportive as can be and gets its emerald color from pureed baby spinach, cilantro, and jalapeño. We can't wait for you to try it!

For our salads and breakfast options this week, check out our "Creamy" Cashew Brown Rice Salad with Microgreens, which features carrots, radish, celery and the creamiest vegan blended cashew dressing you'll ever taste! We're also dishing up a "BLT" Frittata with Turkey Bacon, Kale and Local Cherry Tomatoes that is a delicious and protein-packed meal at any time of day!
