Meal Delivery Menu for June 19th, 2017

As the temps rise, more and more fresh, local produce continues to roll in! Next week's menu includes red potatoes, yellow and green summer squash, Swiss chard, kale, collard greens and asparagus (still!), all from local farms using sustainable growing methods.

We've got some really exciting dishes coming your way next week. First up is the return of our Nutty Tempeh Taco Bowl with Black Beans, Brown Rice, Collards, Pickled Radish and our House Made Guacamole! Our vegan taco "meat" filling is packed with protein in the form of marinated, baked, organic tempeh, mixed with toasted sunflower seeds, pumpkin seeds, walnuts and almonds. You won't miss the beef, we promise! If you are a seafood lover, we've got Shrimp Étouffée with Okra. What is étouffée, you ask? It's a delightfully silky and brothy Cajun one pot meal with a touch of spice that includes shrimp, homemade shrimp stock, green bell pepper and okra.

For the meat and potatoes lover in your home, we're dishing up our Braised Pork Chile Verde over Roasted Sweet Potatoes. This dish starts with pasture-raised, non-GMO, local and sustainable pork shoulder being braised low and slow in our homemade chicken stock and salsa verde. We make our salsa verde from scratch by roasting tomatillos with jalapeño, garlic and onions, then blending with fresh cilantro and lime juice. Hello summer! 

Last and certainly not to be overlooked is our brand spankin' new Vanilla Coconut Chia Pudding that we top with Roasted Rhubarb. It makes for a protein-packed breakfast, super satisfying snack or healthy, naturally sweetened treat!
