🍍 Pineapple Shrimp & Veggie Stir Fry * Green Goddess Quinoa Salad * Cuban Pulled Beef 🍴- Menu for Monday May 8th

We are looking forward to stocking your fridge with some seriously delicious meals next week. Are your taste buds ready? Next week's menu showcases two of the first spring vegetables to arrive on the culinary scene in the Delaware Valley this season: ASPARAGUS and FAVA BEANS! First up is our delightful Spring Fava Bean Ragout with Snap Peas, Asparagus and Parsley Walnut Pesto over Angel Hair Pasta. This dish is a light and seasonal veggie dish that is chock full of flavor. Our asparagus is local and we think you can taste the difference! Fava beans are a generally under-appreciated bean, and here at Grateful Plate, we're ready to make them shine! Did you know that 1 cup of fava beans contains 37% of your daily fiber intake? They're also a great source of iron, folate, manganese and Vitamin K, which are essential to bone and nervous system health. We've also got our super yummy Asparagus, Zucchini and Fresh Herb Frittata which is both dairy-free and gluten-free.

Sticking with the theme of vegetarian dishes, we have a few more up our sleeve that have us jazzed for next week. We're dishing up one of our favorites, Mushroom Rice Black Bean Cake, made with Lundberg Family Farms Organic Whole Grain Grown Rice. This entree is filling and still incredibly fresh. Topped with Hummus and Raw Beet Slaw and served over Garlicky Greens, this dish is sure to leave you full and satisfied, regardless of whether you're vegetarian or not. This week's specialty vegetarian salad is our scrumptious  Green Goddess Quinoa Salad with Edamame, Sunflower Seeds, Radish and Microgreens. The salad dressing is made with blended scallion, avocado, lemon juice and a few other secret ingredients to create a creamy, tangy dressing that is both health-supportive and delicious. All of our salads are available by the pint for $11, or by the 4 ounce lunch portion alongside one of our Loaded Green Salads for $16. We have a couple more weeks until soups say so long for the summer, so get your fill with our Tomato, Parmesan and White Bean Soup, available by the quart for $12.
